This was delicious for lunch and easy peasy.
I used 500g cooked spinach, 4 eggs, 1 punnet mushrooms, tub of cream cheese, 1 onion and a some parmesan cheese.
Seperate the eggs and beat the whites till stiff. Drain spinach and chop finely and add egg yolks. Season well and fold in egg whites. Pour onto baking paper in a swiss roll/biscuit tin and bake for 10-15 min on 180 C. Remove from the over and cool slightly. Place another sheet of baking paper on your work surface and tip roulade out, pull parchment gently off.
Make filling by chopping onion and mushrooms and sweat off. Season and when cool add to cream cheese. Spread filling onto roulade and roll up gently. Sprinkle with Parmesan.
