COURGETTE AND LEEK QUICHE WITH LARDONS

Made for dinner last night.  Sauteed off a leek, one onion, one clove of garlic.  Line a pie dish with shortcrust pastry, I used ready made.  Place ingredients into base.  Sautee off a packet of lardons, or bacon bits and two to three courgettes until just cooked.  Add to pie dish.  In a bowl mix three eggs with 250ml cream and pour over ingredients. Season and bake - 180 C for 45 - 50 minutes.  Enjoy warm or cold with a salad.  Yummy.
